Last week I froze a bunch of crockpot freezer meals. I had been wanting to do something like this for quite a while, so when I came across this post (Slow Cooker Freezer Cooking- 40 meals in 4 hours), I was thrilled. I did not use all of these recipes, but it was a great resource to get me started. I made the Buffalo chicken, Cilantro lime chicken, Ranch chicken tacos, Island chicken, and Balsamic glazed drumsticks from that list. I only did chicken because we are getting a quarter of cow fairly soon so my freezer will be full of beef then! I also threw in some marinated pork roasts, "chicken nuggets" and some steaks for grilling. At the end of the week, I had about 15 meals in the freezer!! The balsamic glazed drumsticks are in the crockpot at this very minute and smell amazing!
Part of the reason why I skipped some of the recipes was because they contained sugar, honey, or maple sugar. I am trying to mostly eat "Trim Healthy Mama" style. If you haven't heard about this book, you should check it out! I could write a review here, but there are already extensive ones on amazon. You can read all about it there. Essentially, I think it combines many good qualities of various popular "diets" and ends up being a plan that anyone can reasonably follow. There are chapters on exercising and hormones which were informative also.
I have dreams of posting recipes, menu plans, and exercise routines that I have been using recently, but it is yet to be seen if any of those dreams will become a reality!
